Then last year Biad Chili released the hotter NuMex Heritage Big Jim, also with five times the flavor. For nearly 20 years the Chile Pepper Institute has conducted research at NMSU, while educating the students and advancing the legacy of NMSU researcher Fabian Garcia, considered the father of the modern chile industry. “With a portion of the proceeds from the online sales being donated to help establish a permanent chile pepper research endowment at the NMSU Foundation, both chile-loving alums and NMSU students will benefit from the unique partnership.”
